I would like to know how to cut a leg of ham.

Place the ham with the trotter facing upwards. This way we can start by cutting the thinnest part and therefore the part which dries out the quickest. If you are going to eat it all in a single day, take off the rind and the external fat by peeling the ham. Use a wide-bladed knife to make a deep cut up to the bone and using the ham cutting knife, begin to cut small, thin slices of ham. Cut slices from the central part of the ham, combining them with those of the bottom cut and the knuckle.
